Get ready for a delicious and shockingly simple weeknight meal. I stumbled across this baked honey mustard chicken recipe at flavorsmade.com, and it will definitely be added to the rotation in our house. This recipe is quick, easy, and packed with flavor, making it perfect for busy weeknights. Even my daughter gave it her seal of approval.

Within the last month I have been cooking meals that haven't been great, or were always the same because I didn't have time to plan. I got back on track this week and it didn't disappoint. While I didn't have all the ingredients for this baked honey mustard chicken in my house, getting them was easy and worth it. Let's take a look:

  • 4 to 5 chicken breasts

  • 1/4 cup whole grain mustard

  • 2 tablespoons Dijon mustard

  • 2 tablespoons yellow mustard

  • 1/4 cup + 2 tablespoons honey

  • 2 tablespoons olive oil, divided

  • salt and pepper

  • 1 cup chopped yellow onion

  • 1 tablespoon minced garlic (about 3 cloves)

  • 4 sprigs fresh rosemary

Ingredients for honey mustard chicken

Preheat your oven to 375°. Next we are going to take the whole grain mustard, yellow mustard, dijon mustard, honey and 1 tablespoon of oil into a bowl and mix well.

This sauce is amazing, the tangy mustard combined with the sweetness of honey creates the perfect balance of flavors!

Heat the remaining olive oil in a skillet and cook onions. I cooked the onions for about 6 minutes then I added the garlic and cooked for another minute or so.

Lightly grease a baking dish, spready the onion mixture evenly on the bottom of the baking dish. Season the chicken with salt and pepper and place over the onion mixture. Pour the honey mustard sauce over the chicken evenly, making sure to coat each piece. Nestle the rosemary in between the chicken.

Bake for 25-30 minutes, until the chicken reaches 165° internally. You can over the pan with tin foil if the sauce starts to burn.

I didn't get a picture before the other 2 chicken breasts were taken.

We served our chicken with white rice and green beans. The honey mustard sauce spooned over the rice was delicious. I would love to hear how you all pair this honey mustard chicken when you eat it, let me know!
