Easy Spam Fried Rice - One Pan Meal

This Spam Fried Rice quickly became one of my favorites I have cooked so far! Something about the crispy little bits of Spam hidden in the fluffy rice, folded in with veggies and bits of egg just really screamed perfection for me! I threw this together in under 30 minutes using day-old rice and only had to purchase one ingredient!



Ingredients:

  • 1 can of Spam

  • frozen mixed veggies

  • day-old rice

  • 2-3 eggs

  • Soy Sauce

  • Sesame Oil


My favorite part about making this dish is that I didn't follow any recipe, I measured everything by heart. Let's jump into it!


First, I put my pan on the stove and put some Olive Oil in the bottom to start heating up. Then, I started to dice up my Spam. Once I was done with that, my pan was ready for me to drop in my rice. I used a pan big enough to use half of it to cook my rice and the other half to cook my Spam. Spread the rice in a smooth layer to achieve a light crisp.

While that was cooking, I popped my frozen veggies in the microwave. You want to make sure you leave the Spam and rice alone so they can get a nice crisp on them. Once you get this crisp, flip and repeat for the other side. You don't want super crunchy rice, just enough to add a little texture.


After the rice and Spam are done, add your scrambled eggs to the pan and cook. I like to keep my eggs as separate as possible from everything else while they are cooking then add them in when they are done.

When the eggs are done, add your veggies and give everything a good mix. Lastly, we are going to add the soy sauce and the sesame oil. You want to cover the rice enough with soy sauce but not drown it. Then add a dash of sesame oil.
