30-Minute Korean Pork Bowls

This has quickly become a household favorite for my ten year old and me! This delicious Korean Pork Bowl is full of effortless flavor and can be so versatile. If my picky eater goes for seconds, you gotta try it out!
Ingredients:
Jasmine Rice
For the Pork:
1 lb ground pork
minced garlic
sesame oil
teriyaki sauce
Pickled Cucumbers:
cucumbers (I used 3 mini)
rice vinegar
salt
sugar


The first time I made these Korean Pork Bowls, I chose to make the pickled veggies with cucumbers and carrots, so it's really up to what you want and what you have. I chose to do a quick pickling because I didn't think about what I was going to have for dinner ahead of time and only had about 30 minutes.
I started with the cucumbers and sliced those thin with a mandolin slicer. Be sure to watch your fingers! Then I took a good amount of salt and put it on the cucumbers and let them sit for over 10 minutes. We will come back to this later!
Then I started heating up a pan for my pork. Once that was hot, I popped in a little olive oil and the ground pork. I seasoned it with garlic powder, onion powder, salt and pepper. I crumbled this and cooked until no longer pink. Next, I added about a tablespoon of minced garlic and cooked for about 30 seconds or until fragrant. Then added some sesame oil and teriyaki sauce. I added enough teriyaki sauce to cover my meat, but not enough to become overly saucy.
Once my meat was done cooking, I cooked up an egg in the same pan. Now let's jump back to our cucumbers! They have been sitting in the salt for at least 10 minutes, you will see a lot of water has come out of them, now you need to squeeze them out. Once you have squeezed them all out, add about a tablespoon of rice vinegar and a teaspoon of sugar. Toss making sure everything is coated. You can add sesame seeds if you want to.
To plate I took a scoop of rice, the ground pork, egg and then put a little of the pickled cucumber on the side. Garnish with green onions and drizzle with chili oil, if desired. The great thing about these Korean Pork Bowls is you can add or subtract in accordance with your taste. This might be what my bowl looked like but my 10 year old just had rice and ground pork in hers, and she still came back for seconds!
